The Hummingbird Way


The Hummingbird Way is an upscale oyster bar helmed by the acclaimed Chef Jim Smith. The Hummingbird Way focuses on the best local seafood, ingredients, and food traditions that make Mobile such a special food destination. Chef Smith is best known for his appearances on two seasons of Top Chef, winning the Great American Seafood Cook-Off, being the Chairman of the Alabama Seafood Marketing Commission, and serving eight years as the Executive Chef for the State of Alabama.

Chef Jim Smith is the Executive Chef and Owner of The Hummingbird Way Oyster Bar in Mobile, Alabama. Since opening its doors on January 7, 2020, The Hummingbird Way has been committed to serving the finest locally sourced and sustainably harvested ingredients available, with a deep respect for Gulf seafood and Southern foodways.

Before opening his restaurant, Chef Smith served as Executive Chef for the State of Alabama for eight years. In that role, he championed Alabama-grown ingredients, supported local farmers and fishers, and served as a passionate ambassador for the state's culinary culture. He promoted farmers' markets and food events across Alabama, helping to strengthen the connection between producers and the public.

In 2011, Chef Smith earned the title "King of American Seafood" by winning the Great American Seafood Cook-Off. As a result, he became a national spokesperson for Alabama Seafood, American sustainable seafood, Gulf seafood, and NOAA, traveling across the country to educate audiences about the importance and benefits of sustainable seafood.

Chef Smith served as Chairman of the Alabama Seafood Marketing Commission for nine years and currently serves as a Chef Advocate for Wild American Shrimp. He is a James Beard Foundation Boot Camp for Policy and Change alum and a dedicated supporter of the Foundation's Smart Catch and Scholarship programs. Under his leadership, The Hummingbird Way earned the James Beard Foundation's Smart Catch Leader Award in 2021, 2022, and 2023. In 2025, Chef Smith was honored with a James Beard Award nomination for Best Chef: South.

He is also a member of World Central Kitchen's Chef Corps and contributes nationally as a member of the Independent Restaurant Coalition. Locally, he serves on the board of the Dauphin Island Sea Lab, further supporting environmental stewardship and coastal education.

Chef Smith and The Hummingbird Way have been featured on Diners, Drive-Ins and Dives, and he is widely recognized for his appearances on Bravo's Top Chef, where he competed in Seasons 14 and 16, finishing in the top ten and earning strong fan support. Through it all, Chef Smith has proudly represented Mobile, The Hummingbird Way, and the State of Alabama with humility, passion, and excellence.
